Confectionery Flavours

M&S Companies have selected a range of standard confectionery flavour from all the previously development. They are concentrated, soluble in water (syrup), reasonably heat stable, natural in mouth-feel, and easy to be applied. The range consists of:

These are liquid form, comprise of mainly natural extract and nature-identical flavour ingredients, dissolved in liquid carrier such as propylene glycol, triacetin, glycerin, or mixture of them. All ingredients are listed as GRAS by FDA/USA, and are suitable for human consumption.

Application

The flavours are standardized to suit application as wide as possible in low dosage; recommendation:

Hard boiled candies	0.1 - 0.15%
Soft Candies	0.05 - 1.0%
Desserts	0.05%
Ice-cream	0.05%
Bakery: biscuit	0.2 - 0.5%
Bakery: cake	0.15 - 0.25%
Cordial	0.05 - 0.1%
Syrup for soft drinks	0.1 - 0.2%
Pharmaceutical: tablet	0.1%
Pharmaceutical: vitamin syrup	0.2 - 0.25%

The flavour should be added to ingredients of any product at the last step, with gentle stirring into the solution or wet granule mixture. Due to the nature of the flavour being constantly evaporating into the atmosphere in direct positive relationship to temperature, maximum avoidance of heating is required.
